Learning to make california rolls was a dare by my husband quite a few years ago. He loves sushi, and I was tired for paying the prices to go out every week. So, I compromised and took this task on. Now that I know the technique, making them, although time consuming, isn't that difficult. I use avocados, cucumbers, carrots, and crab meat. Since I live in backwoods NH, access to raw sushi-fish is limited, so I have yet to go completely raw. However, they are delicious!
